Hollick Sparkling Merlot 2020 Vintage

This wine is made from 100% Merlot grapes from the Hollick Coonawarra vineyard. Made by Hollick since 1992, it continues its reputation as a wine for every celebratory occasion.

The 2020 vintage in Coonawarra can be characterised by small quantities of high quality fruit. Yields were significantly lower due to cool conditions affecting flowering and fruit set. However, the fruit harvested was of exceptional quality. Small berries provided high skin to juice ratio resulting in red wines with great fruit concentration and soft, velvety tannins.

The fruit for the 2020 Sparkling Merlot was picked, crushed and then fermented on skins for eight days in stainless steel tanks. The secondary yeast fermentation which changes the wine from still to sparkling, has produced a fine persistent bead, which is fresh and fruity. A small addition of vintage port at dosage rounds out a velvety, lingering finish.
